BUTTERMILK COCONUT PIE 
1 1/2 c. sugar
2 tbsp. flour
1 stick butter, melted
3 eggs, well beaten
1/2 c. buttermilk
1 tsp. vanilla
1 (3 1/2 oz.) can coconut
1 unbaked pie shell

Mix flour with sugar. Add well beaten eggs, butter, buttermilk, vanilla and 2/3 can of coconut. Mix well. Pour into pie shell. Sprinkle remaining coconut over pie. Bake at 325 degrees for about 1 hour.
