LEMON BUTTERMILK PIE 
4 eggs
1 c. sugar
3 tbsp. flour
1/4 tsp. salt
2 c. buttermilk
4 tbsp. melted butter
3 tbsp. lemon juice
Grated peel of 1 lemon
1 tsp. vanilla
1 baked 9 inch pie shell

Beat egg yolks, sugar, flour and salt until well blended. Add buttermilk, butter, lemon peel, juice and vanilla. Fold in stiffly beaten egg whites. Pour into baked pie shell, sprinkle lightly with cinnamon if desired. Bake in oven at 375 degrees for 20 to 30 minutes or until knife inserted near center comes out clean.
