OVEN CRISPED EGGPLANT 
1/2 c. fine cracker crumbs
1/2 tsp. salt
1/4 tsp. oregano
1 egg
1 tbsp. water
1 lg. eggplant

Mix cracker crumbs, oregano and salt together. Beat egg with water. Peel eggplant and cut in large slices (like French fries). Dip each piece in egg mixture, then into cracker crumbs. Let stand for 30 minutes to set crumbs. Place on baking sheet and drizzle with butter. Bake at 400 degrees for 20 minutes.
