OVEN FRIED EGGPLANT 
Wash and trim medium size eggplant. Cut in 1/2" slices; peel.

1/2 c. soda cracker crumbs 1/4 c. grated Parmesan cheese 1/8 tsp. Salad Supreme

Mix all together. Lightly spread mayonnaise on each side of eggplant. Dredge in crumb mixture and place in single layer in shallow baking pan (ungreased). Bake at 425 degrees for 15 minutes or until lightly browned and tender, turning once if necessary to brown both sides.
