OVEN-FRIED EGGPLANT 
1 lg. eggplant
1 tbsp. salt
Olive or vegetable oil
1/8 tsp. pepper

Pare eggplant and cut crosswise into 1/4 inch slices. Sprinkle eggplant with salt; let stand 20 minutes. Rinse, dry thoroughly. Brush eggplant with oil; sprinkle with pepper. Place slices on greased cookie sheet in preheated 400 degree oven for 10 minutes, turn slices and bake another 15 minutes. Serves 6.
