CHEESY BROCCOLI AND RICE 
1 c. celery, chopped
1/2 c. onion, chopped
2 c. cooked rice
1 (10 oz.) pkg. frozen chopped broccoli
1 (10 oz.) can cream of chicken soup
1 (10 oz.) can cream of mushroom soup
1 c. Velveeta cheese, cubed
1 (4 oz.) can mushrooms

Thaw broccoli. In a large mixing bowl, combine all ingredients. Turn mixture into a greased 2-quart casserole. Bake, covered, for 30 minutes at 350 degrees. Yield: 6 servings.
