CHEESY RICE AND BROCCOLI
CASSEROLE
 
1 (10 3/4 oz.) can condensed cream of broccoli soup
1 (10 3/4 oz.) can condensed cream of chicken soup
2 c. milk
1/2 c. sour cream
2 c. shredded Mozzarella cheese
1 c. shredded Cheddar cheese
2 c. uncooked instant rice
2 c. chopped fresh broccoli or frozen broccoli, thawed
1 small onion, chopped
1 tsp. paprika, divided
1/2 tsp. pepper

In large bowl, combine soups, milk and sour cream. Stir in cheeses, rice, broccoli, onion, 3/4 teaspoon of paprika and pepper. Coat 13 x 9-inch baking dish with nonstick cooking spray and transfer mixture. Sprinkle with remaining paprika. Cover and bake at 350°F for 35 minutes. Uncover; bake 5 to 10 minutes longer or until rice and broccoli are tender.

Serves 16 as a side dish.
