DATE FILLED COOKIES 
1 3/4 c. flour
1/2 tsp. baking powder
1/2 tsp. salt
1/2 tsp. baking soda
1/2 c. sugar
1/2 c. shortening
1 egg
2 tbsp. milk
1 tsp. vanilla
1 1/2 c. chopped dates
1/2 c. sugar
1/2 c. water
1/2 tsp. lemon rind
1 tbsp. lemon juice
1/4 c. chopped nuts

Sift together flour, baking powder, salt, soda and sugar. Cut in shortening. Blend in egg, milk and vanilla. Mix until well blended and smooth. Roll out to 1/8 inch thick. Cut with 2 1/2 inch cutter.

Combine dates, sugar, and water; cook for 15 minutes or until thick, stir constantly. Remove from heat. Blend in lemon rind, juice and nuts. Place 1 teaspoon of mixture in center of half the rounds, top with another round. Seal edges together with fork; prick top. Bake at 400 degrees for 10 minutes.
