VIRGINIA PECAN PIE | |
1/2 pkg. pie crust mix 4 eggs 1 c. sugar 1/2 tsp. salt 1 1/2 c. dark corn syrup 1 tsp. vanilla 1/4 c. all purpose flour 1 c. pecan halves Prepare pie crust mix, following label directions, or make pastry from your favorite single crust recipe. Roll out to a 12 inch round on a lightly floured board; fit into a 9 inch pie plate. Trim overhang flush with rim. Press pastry to rim with the tines of a fork. Beat eggs slightly in a medium size bowl; blend in sugar, salt, corn syrup, and vanilla; stir in flour. Pour into prepared shell; arrange pecans halves in pattern on top. Bake in moderate oven 350 degrees for 45 minutes, or until center is almost set but still soft. Do not over bake, for filling will set as it cools. Cool on wire rack. Serve with whipped cream, if you wish. |
