VIRGINIA SLICER PICKLES | |
1 gallon cucumbers, sliced (not quite as thin as bread and butters) VINEGAR SOLUTION: 6 c. sugar 2 c. water 4 c. vinegar (white) 1 tbsp. celery seed 1 tbsp. salt 2 tbsp. mixed spices Soak sliced cucumbers for 6 days in 1 gallon water and 1 cup salt. Stir every day. On the sixth day soak all night in fresh water with 1 tablespoon alum. Drain and rinse in clean water. Drain, then cook for 10 minutes in water and 1 tablespoon ginger. (Don't overcook). Drain and rinse. Add cucumber slices to prepared vinegar solution. Bring to boil and boil just 2 minutes and can in sterilized canning jars and lids. Two gallons of sliced cucumbers yield approximately 5 quarts. These are worth the trouble! |
