SPINACH CHEESE BAKE 
1 tbsp. butter
2 eggs
3/4 c. skim milk
1/4 c. all purpose flour
1/2 tsp. baking powder
1/4 tsp. salt
1/8 tsp. nutmeg
1 pkg. (10 oz.) frozen chopped spinach, thawed and drained
2 c. (1/2 lb.) shredded Monterey Jack cheese

Preheat oven to 350 degrees. Place butter in an 8 inch square baking dish and set in oven just long enough for butter to melt, about 2 minutes. Tilt dish to coat bottom and sides with melted butter; set aside.

In medium bowl beat eggs lightly. Stir in milk. Add flour, baking powder, salt and nutmeg; beat or whisk just until mixture is smooth. Stir in spinach and cheese. Pour into prepared dish. Bake 30 to 35 minutes or until knife inserted in center comes out clean. Serve immediately. Makes 4 servings, about 320 calories each.
