CARROT CASSEROLE 
1 1/2 lbs. fresh, sliced, cooked carrots
1/4 c. butter
1/2 c. chopped onion
1 c. shredded Cheddar cheese
15 crushed saltine cracker squares
Salt and pepper

Melt butter and onion in microwave until onions are tender. Add to carrots.

In separate bowl, combine cheese, crackers, salt and pepper. Layer 1/2 of carrot mixture in 1 quart casserole, cheese and cracker mixture. Repeat carrots, remainder of cheese. Bake 25 minutes at 350 degrees.

Since microwave ovens vary in power, you may need to adjust your cooking time.
