SWEET POTATO CARAMEL 
1/2 c. milk
1 egg
3 c. (2 1/4 lb.) mashed, cooked sweet potatoes
3 tbsp. butter
1 (8 oz.) pkg. diced dates

Add milk and egg to mashed sweet potato. Beat well until a smooth paste is formed. Meanwhile melt butter in saucepan, add dates and cook for 2 minutes. Add to sweet potato mixture.

TOPPING:

1/2 c. maple syrup
1/4 c. butter

Heat topping together. Then spoon over sweet potato. Bake at 400 degrees for 40 minutes. Serve with sour cream and garnish with whole dates.
