SWEET CINNAMON PICKLES 
2 gallon cucumber rings
2 c. lime
8 1/2 c. water
1 c. vinegar
1 bottle red food coloring
1 tbsp. alum

Peel cucumbers. Slice and remove seeds. Dissolve lime in water and soak cucumbers 3 hours. Drain. Rinse cucumbers. Add food coloring, vinegar and alum. Cover with water. Heat and simmer 2 hours. Drain.

SYRUP:

10 c. sugar
1 pkg. red hot candies
8 whole cinnamon sticks
2 c. vinegar
2 c. water

Mix and boil. Pour over cucumbers. Next 3 mornings, drain syrup in pot. Heat syrup and pour over cucumber rings again. On third morning, heat syrup to boiling and add rings, then put in jars and seal. Process jars about 5-10 minutes. Keeps a long time.
