SCOTCH SHORTBREAD COOKIES 
4 c. flour
1 1/2 c. sugar
1 egg, beaten
1 lb. butter, softened (must be butter, butter doesn't work)
1/4 tsp. salt

Cream butter, sugar and salt (little at a time). Then add beaten egg. Add flour and mix. Spread dough thinly in a 9 x 13 inch cake pan. Prick dough with fork. Bake for 30 minutes at 375 degrees. For crisper bars, allow to sit in off oven overnight.
