TORTILLA CASSEROLE | |
1 lb. ground beef 1 sm. onion, chopped 16 oz. can tomatoes 1 c. enchilada sauce 1 tsp. ground cumin 1/2 tsp. salt 1/4 tsp. pepper 1/4 tsp. sugar 4 oz. can diced green chiles 3 oz. pkg. cream cheese 1 c. shredded Monterey Jack cheese 1/2 c. shredded cheddar cheese 1 doz. (6 inch) tortillas Cook ground beef and onion. Drain grease. Add tomatoes, enchilada sauce, cumin, salt, pepper and sugar. Bring to boil. Reduce heat and simmer 10 minutes. Pour half of meat mixture into 9 x 13 inch pan. Warm tortillas and spread with cream cheese and green chiles. Fold in half and arrange on top of meat. Pour remaining meat mixture on top. Cover with cheese. Cover with foil and bake at 350 degrees for 15 to 20 minutes or until cheese melts. |
