EASY PEACH COBBLER 
1/4 cup (1/2 stick) butter
4 cups peeled sliced peaches
1/2 cup sugar
1 tbsp. + 2/3 cup Bisquick baking mix
1/2 tsp. cinnamon
2 tbsp. brown sugar
2 tbsp. milk

Preheat oven to 400°F.

In a 1-quart casserole dish, combine peaches, sugar, 1 tablespoon Bisquick and cinnamon.

In a bowl, mix 2/3 cup Bisquick with brown sugar. Cut in butter. Stir in milk; drop by spoonfuls into peaches.

Bake at 400°F for 30 minutes. Let stand 5 minutes.

Serves 6.

This wsa truly delicious, and reminiscent of the peach pies I used to bake when the fat in a two-crust pie was not a worry. The only change I made was to add a bit of cinnamon to the topping as well. Will make this again as soon as the peaches I bought to day are a bit more ripe.
