HOPPIN JOHN 
2 cans black eyed peas, heated
1 c. chopped ham
1 c. finely chopped onion
1/2 tsp. hot pepper sauce
2 tbsp. oil
1/2 tsp. salt
3 c. rice, cooked

Saute ham, onions and hot sauce in oil over moderate heat for 3 to 5 minutes, stirring frequently until the onions are soft but not yet browned. Combine peas, ham mix and rice, then heat.
