ITALIAN - STYLE ZUCCHINI 
1/4 c. onion, minced
1/4 c. green pepper, minced
2 tbsp. chopped parsley
1 1/4 lb. zucchini, cut into 1/2 inch pieces
2 c. chopped ripe tomatoes or tomato sauce
1/4 c. fine dry bread crumbs
1/4 c. vegetable oil
Salt, pepper, oregano & garlic to taste
Parmesan cheese

1. Preheat oven to 375 degrees.

2. Combine ingredients in order given in a greased 2 quart ovenproof casserole. Mix well and cover.

3. Bake 1 hour, stirring once. Ten minutes before it's done, sprinkle with Parmesan cheese. Serves 6.
