ZUCCHINI ITALIAN COUNTRY STYLE 
1 zucchini, about 16"-18" long, peeled & seeded or 6 sm. ones not peeled or seeded
3/4 tsp. salt
1 lb. ground chuck
1/2 tsp. salt (additional)
1 garlic clove, minced
1 lg. onion, chopped fine
3 stalks celery, chopped fine
1 (No. 2 1/2) can tomatoes
1/2 c. tomato paste
1/2 lb. American cheese, sliced
3/4 c. grated Parmesan cheese

Cut zucchini in pieces, cover with water, add 3/4 teaspoon salt and boil 3 to 4 minutes (until tender). Brown chuck, salt and add garlic, onion, celery, then add tomatoes and paste. Cook 10 minutes. Add zucchini. Place in ungreased baking dish. Cover with cheese and sprinkle with Parmesan. Bake, uncovered for 350 degrees about 20 minutes. Makes 12 servings.
