STUFFED ACORN SQUASH WITH GROUND
BEEF
 
2 med. acorn squash
3/4 lb. ground beef
1 sm. onion, diced
1/4 lb. Muenster cheese, shredded (1 c.)
1/4 c. ketchup
Salt
1/2 tsp. sugar
Pepper

Bake squash in 350 degree oven until tender, about 40 minutes. Cut in half and discard the seeds. Meanwhile in saucepan cook ground beef and onion until meat is browned and onion tender, about 10 minutes, stirring occasionally. Stir in cheese, ketchup, sugar, 1 tablespoon water, 1/2 teaspoon salt, 1/4 teaspoon pepper. Cook over low heat until cheese is melted, stirring frequently. To serve, place squash halves cut side up, on warm platter. Sprinkle lightly with salt and pepper. Spoon meat mixture into squash centers. Serves 4.
