ZUCCHINI ITALIAN STYLE 
8 oz. tomato sauce
1 sm. onion
1 med. zucchini
1/4 c. celery
1 sm. can mushrooms, drained
1/4 tsp. salt
1 tsp. Italian seasoning
1/8 tsp. garlic powder
1 oz. Parmesan cheese
1 egg, beaten
Salt and pepper

In a small skillet, combine tomato sauce, vegetables and spices. Cook until thickened and vegetables are tender. Sprinkle 1/2 oz. cheese over vegetables. Beat egg with salt and pepper to taste and pour over cheese. DO NOT STIR! Sprinkle on the rest of the cheese. Cover and cook about 3 minutes until egg is cooked.
