CROCK-POT PUMPKIN SPICED STEW 
2 tbsp. oil
1/3 c. chopped onion
1 clove garlic
1/2 green pepper, sliced
1 medium zucchini, diced
1 can whole tomatoes and juice
1 can pumpkin
1/8 tsp. red pepper
1 tsp. chili powder
1/2 tsp. oregano
dash of black pepper
1 tbsp. lemon juice
2 tbsp. parsley, chopped
1/2 tsp. garlic powder
1/4 c. grated Cheddar cheese
whole wheat crackers (optional)

In skillet, heat oil; sauté onion, garlic and green pepper. Cook until pepper is softened. Place in crock-pot; add zucchini, tomatoes and juice and pumpkin. Sprinkle spices on top. Cook on high in crock-pot 3 hours. Serve hot with grated Cheddar cheese on top of each serving.

Serves 6. Serve with crackers.
