EASY TWO EGG CAKE 
2 c. sifted self-rising flour
1 c. sugar
1/2 c. shortening, soft
1 c. milk
1 tsp. vanilla
2 eggs

Heat oven to 375 degrees. Sift together flour and sugar into bowl. Add shortening, milk and vanilla. Beat until smooth, about 2 minutes. Add eggs, beat 2 minutes longer. Pour batter into two greased paper-lined 8 inch round cake pans. Bake 20 to 25 minutes in preheated oven. Cool in wire rack about 10 minutes. Remove.
