MRS. BIRDIE'S BREAD 
1/2 c. warm water
2 pkg. dry yeast
1 tsp. brown sugar
1/2 c. milk
2 tbsp. brown sugar
1 tsp. salt
3 tbsp. wheat germ
2 tbsp. vegetable oil
1/2 c. cold water
2 c. whole wheat flour
1 c. unbleached flour

In a small bowl, combine warm water, yeast and 1 teaspoon brown sugar. Mix well and set aside. In a small pan slowly warm milk. Add 2 tablespoons brown sugar and salt. Add wheat germ and vegetable oil. Warm and stir until the sugar is mixed in. Do not boil it. In a large bowl, put milk mixture from the pan and add the cold water. Add yeast mixture and stir. Slowly stir in the whole wheat flour. Sprinkle a little flour on your hands and knead dough until no longer sticky. You might have to add about 1/2 cup more of the unbleached flour.

After kneading, spread oil all over the inside of the bowl. Cover with kitchen towel. Set in a warm dry place for 1 hour, until the dough doubles in size. Sprinkle little flour on the table. Turn ball out on table. Punch the dough down hard. Let rest 5 minutes. Oil inside of bread pan. Pat dough into shape to fit pan. Cover with kitchen towel. Set pan in warm dry place and let rise 1/2 hour until dough doubles in size. Heat oven to 400 degrees. Bake for 30 minutes until golden brown. Turn bread out of pan and let cool.
