SCALLOPED CORN 
1 can whole kernel corn
1 can creamed corn
1 1/4 c. crushed saltines
2 eggs, beaten
8 slices bacon, crushed
1 c. milk
8 to 12 oz. cheddar cheese, grated
1 med. onion, chopped

Cook bacon. Cool and crush. Combine 1/4 cup saltines and 2 tablespoons bacon grease, save for topping. Pour off all but 4 tablespoons grease. Saute onion in remaining grease when done. Add remaining 1 cup saltines and toss together until all grease is spread evenly. Combine corn, onion, cracker mixture, milk, beaten eggs, bacon, cheese until well mixed. Sprinkle reserved crackers on top. Bake at 350 degrees about 45 minutes or until brown and set.
