TUNA CASSEROLE 
1 1/2 c. chopped onion
2 c. bread crumbs
4 (7 oz.) cans tuna, drained
1 1/4 tsp. salt
3 tbsp. catsup
1/3 c. chopped green pepper
1/4 c. chopped pimento
1/8 tsp. pepper sauce
1 (10 oz.) pkg. sharp Cheddar cheese, divided in thirds
4 tbsp. butter
3 heaping tbsp. flour
3 c. milk
Paprika

Mix onion, crumbs, tuna, salt, catsup, green pepper, pimento and pepper sauce in a large mixing bowl.

Make the cheese sauce by heating butter, then mixing in flour; add milk, stirring lumps down constantly. Add 1/3 cheese, heating until melted.

Pour sauce into tuna mixture and stir well. Chop 1/3 cheese into little chunks and add to tuna mixture so it will melt in the oven.

Place mixture in a large, well greased casserole. Slice the last third of cheese and place on top of mixture. Sprinkle with paprika.

Cover the casserole and bake at 350 degrees for 40 minutes. Ten minutes before done, put a little milk around edge of dish and uncover for last 10 minutes.
