TABOLEH 
3/4 c. bulgur
1 c. boiling water
1 clove garlic, finely chopped
1/2 c. fresh mint, finely chopped or 2 tbsp. dried
1 1/2 c. chopped fresh Italian parsley or 1/2 c. dried
3 chopped tomatoes
1 tsp. salt
1/2 tsp. pepper
1/2 c. lemon juice
1/2 c. olive oil (preferably pressed oil)

Soak bulgur in 1 cup boiling water for 1/2 hour or until water is absorbed. Mix in chopped ingredients, then add salt and pepper, lemon juice, and olive oil. Chill until served. Easy. Serves 4.
