“CHEESY BAKED FAJITA CHICKEN” IS IN:

CHEESY BAKED FAJITA CHICKEN 
4 boneless, skinless chicken breasts
1 env. fajita seasoning
2 tbsp. extra-virgin olive oil (EVOO)
1 red bell pepper, sliced
1 green or orange bell pepper, sliced
1 medium yellow onion, sliced
1 cup shredded Mexican "fiesta" blend cheese

Preheat oven to 375°F (190°C).

In a large bowl, mix fajita seasoning with olive oil. Add chicken breasts and toss to coat. Arrange chicken in a baking dish and top with bell peppers and onions. Sprinkle shredded cheese over the top.

Bake at 375°F for 25 to 30 minutes, or until the chicken is fully cooked and cheese is melted and bubbly.

Serve with a side of Spanish rice or warmed tortillas.
