GROUND BEEF TACOS WITH BEANS 
1 lb lean ground beef
1 red bell pepper
1 green bell pepper
1 yellow bell pepper
1/2 yellow onion
cilantro
yellow Goya seasoning
1 Roma or paste tomato
lettuce
yellow corn tortillas
1 avocado
1 can Bush low sodium black beans
olive oil
limes

Chop onions. Put two teaspoons of olive oil into pan. Bring onion to a golden brown. Cut all peppers and sauté them with the onions till they soften. Add the ground beef and 3 teaspoons of yellow Goya seasoning (or to taste).

Cook for 12-15 minutes. Add one teaspoon of olive oil and let it heat for one minute on low. Drain can of beans into pot with olive oil; let beans cook till thickened.

Put 2 tablespoons of olive oil into a small frying pan. Fry tortillas one by one until crispy.

Make Pico: cut tomato, green pepper, onion, and cilantro into fine pieces and toss in a medium size bowl. Cut half a lime and pour the lime juice into the bowl of cut veggies. Cut avocado into four pieces. Cut pieces of lettuce.

Serve: layer the tortilla with lettuce, then beef, then the pico and then on the side the beans. Put piece of avocado on top of prepared taco.
