CHICKEN CURRY 
4 chickens or 12 chicken breasts, boned
3 tbsp. butter
3 lg. onions, finely chopped
1 clove garlic, crushed
3 tbsp. curry powder, or to taste
1 tbsp. coriander seed, crushed
1 tbsp. powdered ginger
4 tbsp. flour, dissolved in a sm. amount of milk
1 can evaporated milk
4 c. chicken broth
1 tart apple, grated

CURRY ACCOMPANIMENTS:

Peanuts
Bacon, fried crisp
Bell pepper, chopped
Bananas, sliced
Avocado, diced
Shredded coconut
Chutney
Pineapple bits
Raisins, plumped
Mandarin oranges

Cook chicken in water until tender. Remove, save broth. Cube chicken. Saute onion and garlic in butter. Add next 5 ingredients and blend. Add evaporated milk, chicken broth, chicken and apple. Simmer 1 hour, stirring frequently. Serve over rice with any or all of the listed accompaniments.
