STRAWBERRY MERINGUE BARS | |
3/4 c. shortening 1/3 c. sugar 2 egg yolks 1 1/2 c. sifted flour 2 egg whites 1/2 c. sugar 1 c. finely chopped walnuts 1 c. strawberry preserves Set oven at 350 degrees. Beat together shortening, sugar and egg yolks. Add flour, stir until thoroughly blended. Spread mixture in bottom of an ungreased 13"x9" bake pan. Bake 15 minutes. Remove from oven, spread evenly with preserves. Stiffly beat egg whites, beat in sugar (1/2 cup) gradually, fold in nuts. Spread meringue carefully over preserves. Bake 25 minutes. Cool. Cut in bars or squares. Makes 12 bars, 24 squares. Try this recipe with raspberry, cherry, apricot or any other preserves. |
