RED BEANS AND RICE 
1 lb. beans
1 bone from whole ham
1/2 bell pepper
1 med. onion
1 rib celery
1 clove garlic, chopped
3 oz. pork sausage, chopped
1/2 lb. ham
1 tsp. pepper
1 tbsp. salt
2 bay leaves
1 gallon water

Place beans in large pot of cold water. Chop in seasonings. Fry meat, then toss seasonings on top and let saute. Mix sauteed contents into large pot with beans. Place over a slow fire and cook until the beans turn creamy, about 1 1/2 hours. Serves about 6 over rice.
