RED BEANS AND RICE 
1 lb. dried red beans, soaked overnight
1/2 lb. smoked sausage or cooked ham, chopped (can substitute bone also)
1 onion, chopped fine
Salt and pepper to taste
2 shakes each of cayenne pepper and Tabasco - red hot sauce

Combine ingredients with enough water to cover well and cook slowly until beans are tender. Add water from time to time to make a thick rich gravy. Serve over cooked rice.
