RED BEANS AND RICE 
1 lb. dried red beans
2 qts. water
1 ham bone
2 lbs. smoked sausage, cut into pieces
3 garlic cloves, crushed
1 1/2 c. chopped yellow onion
1 1/2 c. chopped celery
2/3 c. chopped green pepper
3/4 c. chopped green onions
1 bay leaf
1 tsp. Worcestershire sauce
1/4 tsp. bottled red pepper sauce
3 c. hot, cooked rice
1 tsp. fresh minced parsley

Rinse beans well and drain. Place in large pot and cover with water. Add ham bone and bring to a boil. Reduce heat and simmer 40 minutes. Add sausage and cook, covered, one hour.

Add garlic, yellow onion, celery, green pepper, green onion and bay leaf. Cover and simmer 1 1/2 hour until beans are soft. Add Worcestershire sauce, pepper sauce, and parsley. Simmer 5 minutes. Remove bay leaf and serve over hot rice.
