CHOCOLATE ZUCCHINI BREAD | |
2 eggs 1/2 c. vegetable oil 1 c. brown sugar 1/2 tsp. vanilla 1 1/2 c. grated zucchini 1 sq. unsweetened chocolate, melted 2 c. flour 1/2 tsp. salt 1/2 tsp. baking soda 1/8 tsp. baking powder 1/2 tsp. cinnamon 1/2 tsp. pumpkin pie spice 1/4 c. chopped nuts Beat eggs; add oil and brown sugar and beat well. Add vanilla, zucchini and chocolate. Beat. Mix dry ingredients together and add to first mixture. Add nuts and beat well. Bake in standard loaf pan at 350°F for 55 to 60 minutes. Cool in pan until bread will remove easily, then cool on rack. |
