6 med. potatoes 1/2 c. butter 1 c. sour cream 3/4 c. chopped green onions Salt and pepper 1 1/2 c. grated Cheddar cheese Cook peeled and sliced potatoes in salted water; drain and mash, leaving them lumpy. Add butter, sour cream, onions, salt and pepper to taste. Place in buttered casserole dish and top with cheese. Bake in 325 degree oven until potatoes are heated thoroughly and cheese is melted, about 20 minutes. Serves 6 to 8. |
