CHERRY NUT LOAF | |
2 eggs 1 c. sugar 1 1/2 c. flour 1 1/2 tsp. baking powder 1/2 tsp. salt 1 c. nuts (pecans) 8 oz. maraschino cherries (reserving juice) Beat eggs, add sugar and beat again. Stir in cherry juice and nuts. Add flour, baking powder and salt to other ingredients. Stir until moist. Pour into a greased and floured loaf pan. Bake at 350 degrees for 45 minutes. These can also be baked in three #2 cans filled 2/3 full and baked for 40-45 minutes. Wrap in foil after cool and freeze. Note: Ideal at Christmas time and for gifts. |
