BEAN AND CHEESE BURRITOS | |
1 (16 oz.) can refried beans 1 med. tomato, coarsely chopped 1 tsp. chili powder 1 (4 oz.) pkg. shredded sharp cheddar cheese 8 (7") flour tortillas 1 (12 oz.) jar mild thick & chunky salsa Sour cream (opt.) About 30 minutes before serving: 1. Preheat oven to 400 degrees. In 2 quart saucepan over medium heat, cook refried beans, tomato and chili powder until heated through; remove from heat. Reserve 1/4 cup cheese for topping; stir remaining cheese into bean mixture. 2. Spread scant 1/2 cup bean mixture onto center of one tortilla, roll up and place burrito in 13"x19" baking dish. Repeat with remaining bean mixture on tortillas. Spoon salsa over burritos; sprinkle with reserved cheese. Cover dish with foil and bake 10 minutes. Remove foil, bake 5 minutes, uncovered. Serve with sour cream if desired. |
