VEGETABLE STEW 
1 1/2 c. sliced onions
2 c. celery, cut into 1 inch strips
1 1/2 c. carrots, cut into 1 inch strips
2 green pepper, s cut up
1 (1 lb.) pkg. frozen green beans
2 lg. potatoes, cut into chunks
2 turnips or ruttabaga, cut into chunks
2 tbsp. fresh parsley, chopped
2 pkgs. fresh mushrooms, whole or halved
2 lg. cans whole tomatoes
4 tbsp. butter
1 1/2 tsp. salt
1 tsp. pepper
1 tbsp. sugar
3 tbsp. tapioca beads

Put all in large roaster with tight cover, and bake for 3 hours at 350 degrees. Stir and mix thoroughly every hour. Add more tapioca, if needed, for thicker gravy.
