CHOPPED APPLE CAKE 
4 c. sliced apples
2 eggs
2 c. sugar
2 c. flour
1 tsp. baking soda
1/2 c. oil
1 tsp. vanilla
1/2 c. chopped nuts
1 1/2 tsp. cinnamon
1/2 tsp. baking powder
1/2 tsp. salt

Preheat oven to 325 degrees. Put sliced apples in a large bowl, break eggs over them and stir with a fork. Blend together sugar, flour, soda, cinnamon, baking powder and salt. Pour over apple mixture an stir well. Add oil, vanilla and nuts, stir well again. Pour into 9 x 12-inch cake pan and bake 1 hour. Makes a nice moist cake and does not need to be frosted.
