SQUASH CASSEROLE 
3 c. squash
4 sm. carrots, grated
1/2 pt. sour cream
1 can cream of chicken soup
2 sm. onions, chopped
2 red or green peppers
1 pkg. herbal stuffing mix
1 stick melted butter

Mix squash, carrots, sour cream, chicken soup, onions and pepper. Mix in 1/2 of the stuffing mix. Blend remaining stuffing mix and butter together and place on top of casserole. Bake at 350 degrees for 30 minutes.
