SPUDNUTS 
1 cake yeast
1/2 c. warm water
2/3 c. shortening
1/2 c. sugar
1 tsp. salt
1 c. mashed potatoes
2 eggs
1 c. lukewarm milk
5-6 c. flour
1/2 to 1 tsp. nutmeg (optional)

Dissolve yeast in warm water. Cream shortening, sugar, salt, potatoes, and eggs. Add lukewarm milk, yeast, flour, and nutmeg, if desired.

Knead and let raise to double in size. Knead down and let raise again. Roll 1/2 inch thick and cut. Let raise 1/2 hour. Fry in deep fat. Glaze or sugar.

GLAZE:

1 tbsp. butter
1 tsp. vanilla
1 lb. powdered sugar
1/2 c. milk

Mix in top of double boiler. Keep hot and dip Spudnuts. Put on waxed paper until cool.
