MUSHROOM MEADOW 
4 baking potatoes
1 lb. mushrooms
Butter
Garlic
6 to 8 strips bacon
2 avocados
Sour cream
Lettuce
Tomatoes
Sprouts

Bake potatoes. Slice mushrooms and saute in butter and garlic. Cook bacon and crumble. Peel and slice avocados. Chop lettuce and tomatoes. In separate serving bowls or on lazy Susan place all ingredients except potatoes. Slice each potato in half and let each person make their own Mushroom Meadow.

I first tried a Mushroom Meadow at a Vegan Restaurant in Tucson, Arizona in 1973. My gal Bonnie Feldman treated me. It had the same ingredients except it was 100% vegan (no sour cream and bacon). Some kind of non-dairy sauce was used in lieu of sour cream. Cherry tomatoes, mushrooms marinated in wine, edible flowers and green onion stems were part of it and it actually looked like a meadow. It is a meal in itself and I never tasted anything better. I would like to send the recipe to Gwyn Paltrow, but it is too complicated to reach her. I should have asked for her iPhone # when I had a chance ten days ago. I met/talked to Gwyn at Trader Joe's.
