SWEET CUCUMBER RELISH 
6 qt. cucumbers (lg. green ones)
3 green peppers
12 med. onions
1 c. pimento or 1 sweet red pepper

Grind and set in 3/4 cup salt and 1 gallon of water overnight. Drain well in cloth bag or squeeze liquid out. Add:

6 c. sugar
1 qt. vinegar
3 tsp. turmeric
1 tsp. mustard seed

Boil 5 minutes, put in jars, seal hot. Makes 11 pints.
