SWEET CUCUMBER RELISH 
8 qts. sliced cucumbers
4 red peppers or canned pimentos
2 qts. apple cider vinegar
1/4 c. mustard seed
9 c. white sugar
12 med. sliced onions
1/2 c. canning salt
3 tsp. turmeric
4 tbsp. celery seed
Blue food coloring

Sprinkle salt over cucumbers and onions. Let stand overnight. Chop in food processor. Drain thoroughly. (Add canned pimento only when ready to can).

Boil vinegar, mustard seed, sugar, turmeric, and celery seed with cucumber, onions, and peppers for 1 minute. Add small amount of BLUE food coloring for a bright green colored relish. (Omit chopped stage for bread and butter pickles).
