LOELLA HANSEN'S SWEET CUCUMBER
RELISH
 
12 lg. cucumbers
1/4 c. salt
4 sweet red peppers
4 lg. onions
4 1/4 tsp. each of celery seed and mustard seed
2 1/2 c. sugar
1 1/2 c. white vinegar
Some chopped celery and onion
1 tsp. pickling spice

Put spices in a bag. Remove seeds from cucumbers. If skin is too tough, peel otherwise leave on. Sprinkle with salt and place in crock or glass bowl and let set overnight. Drain. Put cucumbers, onions and pepper through coarse blade of grinder. Put in kettle with rest of ingredients. Bring to a boil. Cook uncovered for 30 minutes, stirring. Seal. May need to add more sugar.
