DOUBLE SWEET CUCUMBER OR GREEN
TOMATOES PICKLE
 
7 lbs. cucumber
2 gals. water
3 c. lime
1/4 lb. alum
1 box ginger

SYRUP:

5 lbs. sugar
1 tsp. mace
1 tsp. cinnamon
2 qts. vinegar
2 pts. water
1 tsp. celery seed
1 tsp. whole spice clove

Wash and cut cucumbers in rings. Soak in 3 cups lime, dissolved in 2 gals. water for 24 hours. Remove, soak in fresh water 24 hours. Mix 1/4 lb. alum in 2 gals. water and soak for 24 hours. Remove and wash thoroughly in fresh water. Soak 6 hours in solution of a medium size box ginger dissolved in 2 gals. water. Remove and cover with preserving syrup for 3 hours. Place on stove and boil for 30 minutes. Place in jars. Stir with a wooden spoon.
