TWO CORN CASSEROLE 
1/2 c. butter
3/4 c. chopped green pepper
1/3 c. chopped onion
3 eggs, well beaten
1 (17 oz.) can cream style corn
1 (17 oz.) can whole corn with liquid
1 pkg. corn muffin mix
1 c. cheddar cheese (opt.)

Preheat oven to 350 degrees. Saute peppers and onions in butter. Add remaining ingredients. Pour into greased 2 quart casserole dish. Bake 50 to 55 minutes. Let stand 5 minutes before serving. Optional: 1 cup cheddar cheese sprinkled on top.
