FLOURLESS PEANUT BUTTER COOKIES 
These are great for people with gluten allergies!

1 cup peanut butter (smooth or chunky)
1 cup brown sugar packed
1 egg
1/2 cup semi-sweet (or dark chocolate) chips
1 tsp. baking soda

Lightly beat egg, add rest of ingredients. Drop by rounded teaspoon on cookie sheet and bake 325°F for 10 to 11 minutes. Leave on cookie sheet about 5 minutes before removing to cooling rack.

Tip: For some reason these bake best when only when one sheet at a time is cooked.
